Green Snapper
Our newest signature serve for Bush Gin is a riff on the old school Red Snapper. The Green Snapper is a green juice with a spicy backbone and bush base. You can alter the juice and spice ratio as you see fit. But here is how we do it in the bar.
Ingredients:
- 30ml Summer Gin Project: Bush
- Top with green juice*
*To make a batch of green juice (verdita) combine 600ml green tomato juice, 300ml green cucumber juice, 1 stick of lemongrass, 2 kaffir lime leaves, a large pinch of pepper and salt, 5 coriander stalks, 1 bunch mint, 1 bunch Thai basil, 4 jalapenos, 100ml lemon juice, 1 eschalot and 100ml ginger syrup (1:1 ginger juice to sugar ratio).
Method:
Juice green tomatoes and cucumber.
Put all other ingredients (except gin) into a blender and blend.
Build gin & juice over ice and garnish with a jalapeno.
