Eastside
An Eastside is a variation on the prohibition classic; Southside. An inch or two of cucumber added to the shaker - some people like to muddle - if you’ve got above-average ice you can do quite a lot of damage to the ingredients without muddling. Muddling is a method of using a large heavy baton to press the fruit to release juice and therefore flavours from ingredients. The cucumber cools the citrus in a Southside, it’s a perfect hot afternoon cocktail. The difficulty lies in sticking to one.
