CLOVER CLUB
The Clover Club is a really old drink that went out of fashion possibly because raspberries weren’t considered “manly” - a very silly reason not to enjoy it. The combination of gin, raspberries, lemon and frothy egg white make this a total crowd pleaser.
Ingredients:
- 20ml raspberry syrup*
- 15ml dry vermouth
- 20ml lemon juice
- 15ml egg white
*You can make raspberry syrup at home with sugar, water and raspberries (do it to taste - the raspberries will vary in acidity - start with equal parts and adjust from there) or you can cheat and buy some decent raspberry syrup from a good bottle shop.
Method:
Dry shake (shake without ice), and then add ice and shake again - whipping that egg up into a frothy frenzy - and strain into a cocktail glass. Garnish with some leftover raspberries.
